Indications
Extra virgin is the highest quality grade of olive oil. It is lowest in acidity (less than 1 percent). Because it comes from the first pressing of olives and is unrefined, extra virgin is the richest and fruitiest in taste. Its color may range from pale yellow to greenish gold.

Extra virgin olive oil is monounsaturated and, when used in recommended amounts as a part of a heart healthy diet, can lower total blood cholesterol without lowering HDL ("good") cholesterol levels.

Therapeutic Indications
Extra virgin olive oil has been used for centuries as both food and medicine. It is one of the staples of the Mediterranean diet due to its nutritive and health benefits.

Extra virgin olive oil is rich in health promoting and protecting compounds. It is high in vitamins E and K both of which protect the body from disease. It is a good source of both omega-6 and omega-3 fatty acids which help to strengthen cell membranes

Research also is showing that extra virgin olive oil (unrefined) is rich in polyphenols and phytosterols. These phytochemicals are potent antioxidants. It is thought that consumption may contribute to the lower incidence of heart disease and cancer seen in the Mediterranean region.

Researchers suspect that these antioxidant polyphenols are responsible for a reduction of blood pressure in high blood pressure patients. A study published in the journal Archives of Internal Medicine reports concluded that people on high blood pressure medications may be able to reduce the amount of medicine they take if they substitute extra-virgin olive oil for other types of fats in their diet.

Storage
Products containing Olive Oil should be stored in a cool, dry area until used. Once opened, refrigeration and tightly closing the cap will prolong the products' shelf life.
